#1 Zucchini Chicken Enchiladas Boats
Honestly hell may have frozen over on Sunday evening because Kyle–yes, my husband Kyle–asked me if we could do my ‘cleanse’ again. Uhmmm, what!? I’d like to think his request was because he’s finally on-board with a healthy lifestyle but I have a feeling it has a little bit more to do with him drinking beer 6/7 nights last week and eating enough food for someone 4x his size. But whatever his motivation is, it’s given me the perfect excuse to remake a handful of my favorite dinners for us. Up on the list first is one of my Summer go-tos: Zucchini Chicken Enchiladas Boats and I couldn’t be more excited! Anything Mexican and we’re sold. These are super easy to make too which is another major selling point! I make the chicken ahead in the crock pot so the assembly time for the enchiladas is less than 10 minutes then bake for 35 minutes and you’re good to go. So yummy!
#2 Upping my treadmill speeds
It’s nice to feel comfortable, right? Getting out of our comfort zones, whether that’s in terms of fitness or just life in general, isn’t usually fun. I’m the first person to hop on my typical treadmill at OrangeTheory, talk to the same people at church on Sundays, sit in the same area at the local coffee shop, etc. Routines are my jam you could say; OCD-esque for sure. But about 3 weeks ago I decided I wanted to see more results from OTF and from my body so I did the uncomfortable {and made an adjustment I could control!} and increased my speeds. I’ve taken my ‘Base’ up by 0.5 mph, my ‘Push’ up 0.5 mph and my ‘All Out’ up 1 full mile per hour. It’s been hard. It’s been extra sweaty. But it’s also been awesome. I’ve seen an improvement in my pace on my runs and I can finally feel myself acclimating, even if just a little bit, to those increased speeds. Feeling like you’re on a bit of a plateau or even like you’ve slumped a bit? I challenge you to increase or change something! Push your pace, grab the heavier dumbbells, hold that pose longer…whatever it is, do it for YOU!
#3 Comfortable Sandals
So if you follow along the blog and social media, you’ll know that I’m now fully immersed in the fitness world & am the newest Studio Director for OrangeTheory Fitness in Omaha. I seriously am still in awe that I’m in this place but feel so blessed–also a little nervous yet super excited! Because our new studio is currently under-construction my ‘office’ is basically a pop-up tent out in the parking lot of our building. For the next 12 weeks we’re in presale mode so I’ll be on my feet like all the time. Oh and the highs are in the mid 90s for the foreseeable future so I’m in desperate need of some comfortable, sporty-ish sandals. My suede Birkenstocks are life but I can’t wear them every day so I need an alternative pair. Any suggestions?! Send them my way! Right now I have 4 pairs I’m considering…have you tried any of these? Any input on them!? Share below <3
I am going to try out that recipe for my husband! I’m a vegetarian but I always love trying to cook new foods for him. Congrats on being the new Studio Director! I’ve only heard great things about OrangeTheory <3

Go for Sanuks!! They are my go to sandals and Made out of yoga mats … the bottoms are heaven!!
it does feel good, although i sometimes hate it, to get out of your comfort zone at the gym!!
