#1 Scallop Linguini
I made THIS recipe for dinner on Valentine’s Day and it was a major hit. Like seriously so good. This was my first time cooking scallops at home and not to brag, but I kind of nailed it. 🙂 As I do with most recipes I added a few things on my own and I’m really happy that I did. The pasta would’ve been super plan if I would’ve left it as is so I squeezed some fresh lemon over it, added about a tbsp. of EVOO, 1/2 a jar of fire-roasted tomatoes and 2 tbsp of capers. Because I was paranoid about overcooking the scallops, I stuck with making a lemon + garlic arugula and spinach salad to pair with it. Just call me Rachel Ray! Everything took less than 30 minutes, and 15 of that was waiting for the pasta to soften, so it’s definitely something worth trying.
#2 Ice Roller
I know this is usually the part where I put my favorite workout/fitness piece for the week and that Ice Rollers are supposed to be more for your face, but girlfriends let me tell you…after my first long run outside on the pavement last Saturday, my shins have hated me. So insert the ice roller to save the day. I’ve been rolling the crap out of my shins and calves and I cannot tell you how amazing {and painful} it feels. I mean I love using mine on my face every night too but using them on my sore muscles has been a game-changer recently. For under $20 you can get yourself a legit option that can clearly serve many purposes.
#3 These Wedges
Yes, every blogger and their closest friends have these but I promise it’s because they’re that good. Of course I had my eye on the original Chloe version last Spring but in no reality would I spent $660 on a pair of shoes that I can only wear about 5 months out of the year, so I obviously passed. Then these cuties came out but were constantly sold out in my size {like they currently are again at Nordstrom but available in additional sizes HERE & HERE!} which meant I missed out on their glorious-ness in 2016. Needless to say I was so excited when they came back and offered a few additional styles & colors. Since I’m obsessed with blush pink everything, it was a no brainer for me to snag the wedges in the Blush Suede option. Currently these blue beauties are in my cart as well. I promise this style of wedge is incredibly comfortable and they’ll be super slimming on your legs. #winning If this particular brand is a little outside of your budget, I did find THIS PAIR and THESE as really similar options!
